Shawarma preparation: Negligence could result in tragedy


 ‘Shawarma’, the minced meat wrap, has entered into the hate list of food lovers, due to the negligence of some irresponsible chefs, feel experts in the field.


‘’Defrosting of meat can be the villain if it is done in a careless manner. Whatever be the kind of meat used, it should be treated with proper care. Normally, it takes four to five hours for defrosting,” said a chef.  “Many take the easy route to defrost the meat. They will take out the item from deep freezer and keep it either in water or outside the freezer. Both could be dangerous as it increases the chances of the meat getting poisonous. The meat should be kept in chiller before taking into the room temperature,” said C Azeez, a native of Thalassery, who was in the hotel and cafeteria business in Dubai for over a decade. He also pointed out another possibility of danger when shop owners keep the rest of the meat from a day’s business.


“Even the experienced ones can’t recognise the old meat from the fresh if the sides are sliced smoothly as if we prepare a pineapple. The health authorities should check this out on a daily basis ,” he said.
